If saccharomyces is the ‘Dog’ of the brew house, obedient, loving and predictable… Then Brettanomyces is the ‘Cat; unpredictable, odd behavior, disobedient yet if given the chance it will dominate the brewhouse. We ferment in old cabernet barrels and age for a minimum of 3 months leaving you with a complex range of funky, malty and oak driven flavors. The aroma may be a little different to what you are used to, but that is just the ‘cat’ doing its thing.
